Lomo Lomo is an Ilocano soup from the Philippines. Ilocano is a dialect used by people who primarily live in the province of Luzon in the northern Philippines. “Lomo” means pork tenderloin. There are many variations of this soup, but generally, it is made with pork, broth, and chives.

How to Make Filipino Lomo Lomo (Pork Soup)

  1. Chop pork chops into 1-inch cubes.
  2. Add olive oil to the cooking pot over medium heat. Once olive oil is heated, add cubed pork chops and garlic to the pot. Cook and stir occasionally for 3-5 minutes or until meat is no longer pink.
  3. Add chicken bouillon cubes and stir for 1 minute.
  4. Add water. Turn heat down to medium-low and simmer for 20 minutes.
  5. Slice chives into about 1/2 inch pieces. Add to pot and continue to simmer for 5 minutes.
  6. Remove pot from heat. Serve warm with rice. Enjoy!

Tips

  • Type of Pork- I use pork chops for this recipe, but pork shoulder also works great! Whatever meat you choose, there should be a little fat.
  • Chicken Bouillon Cubes- I like using Knorr Chicken Bouillon Cubes because they’re big, but other brands work as well.
  • Rice- I prefer Calrose or Jasmine rice.

How to Cook Rice

I use a Tiger rice cooker to cook 2 cups of rice for my husband and me, but you can cook rice on the stove as well. See below for instructions on cooking 1 cup of rice.

  1. Add 1 tablespoon of butter or cooking oil to a large saucepan. Let the butter melt.
  2. Bring 2 cups of water to a boil in the same pan. Then, add 1 cup of rice. Lower the heat and cover the pan. Keep rice at a simmer for 20-25 minutes, stirring occasionally and checking to see if the liquid has been absorbed.
  3. When the rice has absorbed all the liquid, remove it from the heat and fluff the rice with a fork. Serve hot or warm for best results. Enjoy!

How to Store Leftovers

Leftovers can be stored in the refrigerator in an air-tight container for up to 4 days.

Nutritional Value

In a typical serving of Filipino Lomo Lomo, approximately 300 grams, there are about 350-400 calories. The dish primarily provides protein from the pork, essential for muscle growth and repair. However, it’s important to consume it in moderation due to the fat content.

Serving and Presentation

Filipino Lomo Lomo is best served hot, garnished with freshly chopped green onions. Pair it with steamed rice or enjoy it as a standalone soup dish. The presentation is simple yet inviting. The vibrant colors of the vegetables combined with the tender pork make for an appealing and appetizing meal.
