Why Filipino Banana Bread is a Must-Try recipe?

Filipino Banana Bread is a tasty mix of the familiar and the exciting. By adding coconut milk and a touch of vanilla, I take the regular banana bread up a notch, making it creamy and rich.

Kitchen Equipment You’ll Need

Before we start making the recipe, let’s check that we have all the right tools in our kitchen to make sure everything goes smoothly:

  • 9×5-inch loaf pan
  • Mixing bowls (medium and large)
  • Wooden spoon or spatula
  • Whisk
  • Measuring cups and spoons
  • Cooling rack

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup coconut milk, I use (Thai Kitchen Coconut Milk)
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

  1. Get Ready for Baking: Turn on the oven to 350°F (175°C). Also, rub some oil and sprinkle a bit of flour in a baking pan that’s 9×5 inches big. This will help the bread come out easily after baking.
  2. Squish the Bananas: In a bowl that’s not too small but not too big, squish the bananas with a fork or something like a potato smasher until they look smooth and creamy.
  3. Mix the Wet Stuff: In a bigger bowl, mix the squished bananas, coconut milk, vegetable oil, and vanilla extract. Mix it all up really well.
  4. Add the Dry Stuff: Next, put in the flour, baking powder, baking soda, and a bit of salt. Gently mix it all until it’s mixed but not too much. We don’t want the bread to be too heavy.
  5. Pour and Cook: Pour this mixture into the pan you prepared earlier. Spread it out so it’s nice and even. It will bake for 50-60 minutes. You’ll know it’s ready when you poke it with a toothpick and it comes out clean.
  6. Cool Down and Yum Time: Once it’s out of the oven, let it sit for a bit in the pan (about 10 minutes). Then, move it to a wire rack to cool down. Once it’s cool, you can cut slices and enjoy eating!

Notes

Make sure your bananas are just right, they should have brown spots and be a bit soft. That’s when they taste the sweetest! If you want to make your banana bread extra yummy, you can add little pieces of nuts or chocolate. They’ll give your banana bread a nice crunch and make it taste even better!

FAQ

Can I use coconut oil instead of vegetable oil?

Yes, you can use coconut oil instead of vegetable oil. Use the same amount. It will make your bread taste more like coconut.

How do I keep leftover banana bread fresh?

Put it in a sealed container at room temperature for up to 2 days. If you want to keep it longer, wrap the slices in plastic and freeze them for up to 3 months.

Food Pairings

Filipino Banana Bread tastes great on its own. But you can also enjoy it with a cup of hot Filipino coffee or a cool tropical fruit smoothie. The different flavors together are really yummy!
