Sweet blackberries mixed with lemon juice on a crumbly pie crust. Easier to make than pie and tastes just as good! One of the many reasons I love summer in the Pacific Northwest is that it is berry season. Every August, you will start to see blackberries ripen and pop up everywhere you go. Even though the blackberry bush is an invasive plant, the fruit it produces is so delicious! With my new stash of blackberries, this Blackberry Crumb Bars is one of my favorites to make.

Equipment Needed
- Small baking dish (example: 8.5 x 5.5)
- Large bowl
- Medium bowl
Ingredients for Blackberry Crumb Bars
- All-purpose flour
- Unsalted butter (cut or shredded)
- Granulated white sugar (1/2 cup + 1/4 cup)
- Salt
- Baking Powder
- Egg (beaten)
- Blackberries
- Lemon juice
- Cornstarch
- Cinnamon (optional)
How to Make Blackberry Crumb Bars
- Preheat oven to 375 degrees Fahrenheit. Grease a small baking dish with butter or cooking spray.
- In a large bowl, stir the flour, 1/2 cup granulated white sugar, baking powder, and salt. Cut in the butter and stir until the dough is in pea-sized pieces.
- Add the egg and stir until combined. Press half of the dough mixture into the bottom of the greased baking dish.
- In a separate bowl, combine the blackberries, lemon juice, cornstarch, and sugar. Stir until combined.
- Pour the berry mixture over the crust in the pan. Sprinkle the other half of the dough mixture over the top. Sprinkle with cinnamon if desired.
- Bake for 35-40 minutes, or until golden brown. Remove from oven and cool completely. Serve as is or over vanilla ice cream. Enjoy!
Tips
- Fresh blackberries are preferred for this recipe, but frozen can be used as well. Just be sure to thaw the berries first.
- To cut in the butter, I like to use a cheese grater or zester. This makes the process easier and faster! You can use a fork to stir, but I find it easier to use my hands.
- For extra flavor, add some cinnamon on top!
How to Store
These blackberry crumb bars can be stored in an air-tight container at room temperature for up to 4 days. Want to store these bars for a longer time?
