Keto Chicken Crust Pizza Recipe

One day my husband and I were visiting with some family and my sister-in-law was talking about a new pizza crust recipe. She said it may sound strange, but it actually tastes really good. Intrigued, I wrote down the recipe and tried it myself. I was pleasantly surprised and enjoyed this pizza!

This pizza is not like your ordinary pizza, but it is low-carb and super simple to make. All you need is a few ingredients for the chicken crust and some of your favorite toppings. In a short amount of time, you got yourself a low-carb delicious dinner!

Equipment Needed

  • Pizza stone
  • Large bowl
  • Pastry mat (optional)

Ingredients for Keto Chicken Crust Pizza

  • Shredded chicken- I use canned shredded chicken for this recipe, but you could also use ground chicken, rotisserie chicken, or create your own shredded chicken from chicken breast.
  • Parmesan cheese- This cheese binds nicely with the other crust ingredients.
  • Garlic- Adds flavor.
  • Salt- Adds flavor.
  • Eggs- The binding agent for this “pizza dough”.

Toppings

  • White garlic sauce- Check out my homemade creamy garlic sauce here. It’s so delicious and tastes great on pizza!
  • Spinach- I love greens on my pizza and spinach tastes so good! You can also use mixed greens, arugula, or other greens.
  • Chicken- More cubed chicken breast for the toppings!
  • Mushrooms- I use sliced baby Bella mushrooms, but whatever preference of mushroom you like would work.
  • Tomatoes- I use sliced heirloom tomatoes because I love the taste!
  • Mozzarella cheese- I believe mozzarella cheese is the best for a pizza topping because it’s so stringy, thick, and delicious!

How to Make Keto Chicken Crust Pizza

  1. Preheat your oven to 400°F (204°C) with the pizza stone inside.
  2. In a large bowl, stir together the shredded chicken, grated parmesan cheese, garlic, and salt until combined.
  3. Add in the eggs and mix until well combined.
  4. Spread the chicken mixture onto the parchment paper and form a circle. The “crust” should be about 1/4 inch thick. Carefully place the parchment paper onto the pizza stone.
  5. Bake for 20-22 minutes, or until the edges are golden. Remove from the oven and let the crust cool for at least 10 minutes.
  6. Add the white garlic sauce, spinach, cubed chicken, mushrooms, tomatoes, and mozzarella cheese. Bake for 10-15 more minutes. The cheese should be melted and bubbly. Remove from the oven and serve. Enjoy!

Tips

  • Make sure the chicken crust is completely cooked. The longer it sits on the pizza stone, the crispier it will be and taste more like a traditional thin-crust pizza.
  • Don’t go overboard on the toppings. This will make the crust soggy.

How to Store

This pizza is best served warm, but the leftovers taste great too! Any leftovers can be stored in an airtight container for up to 4 days in the refrigerator. When you are ready to eat, either pop the pizza in the microwave, or air fryer or reheat it in the oven.
