This Amish cottage cheese muffins recipe is a knock off of the delicious (and simple) muffins of the same name.     I was talking about my site the other day, and someone made a recipe request: McDonald's Sweet and Spicy Jam copycat recipe! It's the first request that I've had. This recipe took quite a while to figure out, mostly because I never had it. So I had to do a bunch of reading online of what it was supposed to taste like, along with the ingredients list on the little container itself. If you've ever tasted it, give me a heads up about how authentic it is. Either way, I've heard it's pretty good!

    This is a wonderful recipe for how to make homemade strawberry jam. You gotta trust me, it's so much better than the store bought stuff, which contains all sorts of preservative and other yucky stuff. And it only has three ingredients: strawberries, sugar, and lemon juice. I love to collect strawberries from my patch of evergreens. They are bursting with flavor ... but I don't get that many of them. I freeze them and make this jam. But don't worry, you can use store bought strawberries, too.
