Ingredients

  • 1 pound fresh salmon fillet, cooked and shredded
  • 2 cups breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped or 2 teaspoons dried parsley
  • 3 eggs
  • Salt and pepper
  • pasta and sauce of your choice

Instructions

  1. Air fry your salmon. My settings: 360F for 11 minutes. It doesn't matter really how you cook your salmon, so whatever works for you ... oven, pan fry, toaster oven.
  2. Remove skin.
  3. In a bowl, shred the salmon and add the remaining ingredients. Mix well with clean hands.
  4. Preheat skillet. Shape mixture into meatballs. Tip: Make your hands a little wet to stop the mixture from sticking.
  5. Fry meatballs until at least two sides are golden brown.

Notes

Sprinkle some parmesan or mozzarella on top, and garnish with parsley.
