Instructions
Preheat oven to 400˚F. Remove puff pastry from the freezer and thaw according to package instructions.
In a medium to large saucepan, melt butter over medium heat. Add diced apples and cook for 5-8 minutes, or until softened. Stir occasionally.
Reduce heat to medium-low. Add light brown sugar, cinnamon, and salt. Stir for 2-3 minutes, or until the apples are soft and caramelized. Remove from heat and set aside.
Unfold thawed puff pastry onto a pastry sheet. With a rolling pin, roll each puff pastry into a large square. Cut into 4 equal squares (using a pizza cutter helps). Repeat for the second puff pastry.
Scoop apple mixture into the middle of each square, leaving about a 1/2″ border.
In a small bowl, beat together the egg and water to create an egg wash. Brush the egg wash onto the edges of each pastry square. For each square, fold one corner over to the opposite corner to bring the edges together. Use a fork to seal along the edges.
Transfer pastries to a baking sheet with parchment paper. Space pastries at least 1″ apart and cut 3 small slits on top of each pastry. Brush the tops with the remaining egg wash and bake for 20 minutes, or until golden. Enjoy!
