2 cups quinoa (cooked, from 3/4 cup dry quinoa)
1 1/2 cups broccoli (chopped)
1 cup cheddar cheese (shredded)
2 eggs
2 teaspoons garlic (minced)
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions
Preheat the oven to 350°F (180°C). Grease a standard muffin tin with butter or cooking spray. If you have muffin liners, you can use these as well.
In a large bowl, mix together the 2 cups of cooked quinoa, 1 ½ cups of chopped broccoli, 1 cup of shredded cheddar cheese, 2 eggs, 2 teaspoons of minced garlic, ½ tsp of salt, and ½ tsp of pepper.
Spoon the mixture into the muffin wells and pack down so that each cup is full. This will help the quinoa bites bind and hold while baking.
