Instructions
Place party chicken wings in a large ziploc bag with soy sauce and minced garlic. Marinate for at least 1 hour, but I recommend marinating overnight for flavor.
Heat a large pan with olive oil over medium heat.
Place marinated party chicken wings in the pan. Cook for about 3 minutes. Don’t throw out extra marinade in a ziploc bag!
Flip the chicken over. Pour in extra marinade and cook for about 2-3 minutes or until chicken has no more visible pink.
Add water, bay leaves, and 1 tsp pepper to the pan. Reduce heat to medium-low and simmer for 20 minutes.
The water will slowly evaporate, but make sure there is always water in the pan to prevent burning.
Flip the chicken over. Add rice vinegar and the remaining pepper. Simmer for about 5-8 minutes. If water is low, add a little more to prevent burning.
Remove pan from heat. Serve chicken adobo with rice or whatever you desire. Enjoy!
Notes
u003cliu003eType of chicken: I prefer using party chicken wings due to the cut and size, but drumsticks work as well.u003c/liu003eu003cliu003eHow long to marinate? If you’re in a time crunch, you can get by with only marinating the chicken for an hour, but I recommend marinating overnight. Marinating the chicken overnight will give you delicious flavor the next day!u003c/liu003eu003cliu003eAlways make sure there is water in the pan when cooking the chicken. The chicken can burn easily if too much water evaporates.u003c/liu003e
