Instructions
Preheat your oven to 350°F (177°C). Line two baking sheets with parchment paper or silicone baking mats.
In a large bowl, using a stand mixer or hand mixer, cream together the butter and sugar until light and fluffy (~2-3 minutes, medium speed).
Add the egg, vanilla, and maple extract. Mix until just combined.
Slowly add the flour mixture to the large bowl and beat in until fully incorporated.
Using a cookie scoop or ice cream scoop, scoop the dough into balls and place them onto the baking sheet. Space the cookies about 2 inches apart.
Place the cookies into the oven and bake for 10-12 minutes, or until the edges start to turn slightly brown. Remove the cookies from the oven and rest on the parchment paper for about 2-3 minutes before transferring them to a cooling rack. Place the second baking sheet into the oven and repeat the process. Enjoy!
Notes
When you scoop the dough onto the parchment paper, gently pat down on the ball to flatten the dough slightly. This will help the cookies get a round shape.
If you don’t have maple extract, you can use 1/4 cup of maple syrup. I recommend using real maple syrup!
