Instructions
Cook the chicken: Heat 1 tablespoon of olive oil in a medium pan over medium heat. Add ¾-1 lb of boneless skinless chicken breasts cut into one-inch pieces into the pan. Cook for 5-7 minutes, stirring frequently until fully cooked. Set aside.
Add 2 tablespoons of olive oil to the pan. Add 1 cup of mushrooms (sliced) and 1 medium zucchini (sliced). Cook for 5-8 minutes, until softened. Add 1 teaspoon of garlic (minced) and cook for 1 minute.
Add the chicken back in and stir. Add ¼ cup soy sauce and 1 tablespoon rice vinegar. Stir to coat. Remove from heat. Stir!
