Wood chips for smoking
After you wash it well, first, use a towel to gently dry the mahi mahi fish. This helps it cook perfectly when we add that smoky flavor.
Next, put some sea salt and black pepper on the fish. Pour a bit of olive oil to make it taste better.
Put the wood chips in water for 30 minutes. While they soak, set up the smoker following the instructions. Make it a bit warm, not too hot.
Once everything is set, place the fish on the smoker. Close the lid, and let the magic begin! It should smoke for about 20-30 minutes or until it's cooked inside and reaches 145°F (63°C).
