Shrimp Pad Thai

Begin by soaking the rice noodles in hot water according to the package instructions. Once they are tender, drain and set aside.

In a big frying pan or wok, make it hot by heating the vegetable oil on medium-high. Put in the tiny pieces of garlic and stir until they smell really good. Throw in the shrimp and cook them until they look pink and not see-through. Take the shrimp out of the pan and leave them on a plate to the side.

Push the remaining oil to one side of the pan and pour the beaten eggs into the open space. Scramble the eggs until just set.

Add the soaked rice noodles, cooked shrimp, bean sprouts, sliced bell pepper, and chopped green onions to the pan. Stir-fry everything together until well combined.
