Chop pork chops into 1-inch cubes and Add olive oil to the cooking pot over medium heat. Once olive oil is heated, add cubed pork chops and garlic to the pot. Cook and stir occasionally for 3-5 minutes or until meat is no longer pink.
Add chicken bouillon cubes and stir for 1 minute.
Add water. Turn heat down to medium-low and simmer for 20 minutes.
Slice chives into about 1/2 inch pieces. Add to pot and continue to simmer for 5 minutes.
