Coconut Lemon Bars


– 1 cup unsweetened shredded coconut – 1 ½ cups all-purpose flour – ½ cup powdered sugar – 1 cup unsalted butter (chilled and cubed) – 4 large eggs – 1 ½ cups granulated sugar – ½ cup fresh lemon juice – 1 tablespoon lemon zest – ¼ cup all-purpose flour (for filling) – ½ teaspoon baking powder – A pinch of salt

First, Preheat the oven to a big number, 350 degrees! You'll also need a baking pan, and you can put parchment paper.

Now, let's mix some stuff! Put shredded coconut, flour, sugar that's like powder, and cold butter in a food processor. Press a button, and watch it go vroom! Keep going until it looks like little pieces.
